The Junmai are only composed of rice, koji (brewing yeast) and water. The quality relies on the quality of the rice and the know-how of the brewers.
The Honjozo are built by master brewers who by adding alcohol, usually pure sugar cane, structure the aroma of their sake.
A junmai, in general, has more body and more acidity than a Honjozo which will be subtler, with more pronounced aromas.
