Sencha, immediately steamed after harvested to stop fermentation, is a key difference between Japanese green tea and Chinese green tea. The most popular leaf type in Japanese green tea type.
Sencha is the most common tea in Japan.
It is roasting with steam which allows the oxidation of the leaves to stop and differs from the Chinese charcoal roasting method. The resulting taste is greener and refreshing.
It can be drunk cold during the summer.
