Hojicha green tea is extremely popular in Japan. It is commonly offered in traditional restaurants as a sign of welcome.
The method of roasting green tea was invented during the 1920s in Kyoto and consists of grilling the leaves on charcoal.
The infusion of roasted tea, called Hōjicha, is bronze in color and has caramel and woody flavors close to coffee.
Another advantage is that the roasting reduces the theine, so the Hōjicha is very little exciting.
