Sake "Shirakabegura" Junmai Daiginjo
This medium-bodied daiginjo delivers a skillful balance of sweetness and crisp acidity with a long finish. An excellent match with lightly seasoned foods and sashimi.
Takara Shuzo Group is famous in Japan for its mirin, shochu and sake productions for over a hundred years. The group owns the Shirakabegura Brewery which produces all its prestigious sakes in Nada in the Hyogo region in an architectural building combining modernity and tradition.
The Junmai Daijinzo" sake grade qualifies a Junmai sake whose rice polishing rate is less than 50%. Thus, Junmai Daijinzo sakes will generally be drier with more pronounced aromas than Junmai sakes.
This Shirakabegura Junmai Daijinzo sake comes from a 45% polishing rate and has a particularly fruity and fragrant aroma with aniseed notes.
